Cardoons are hard to grow, easy to enjoy
Cardoons, which need a long, cool growing season and a fair amount of space to grow, were popular in Colonial America but have fallen out of favor. They are related to artichokes and can be blanched, braised or pureed. Recipes are included. The Atlantic Monthly (7/2009)
